Ingredients for 4 servings:
1. 1 (14 ounce) package firm tofu, cut into small cubes
2. 2 tablespoons fresh ginger, grated or 1 teaspoon ginger, powdered
3. 1 tablespoon fresh garlic, minced
4. 1 medium onion, minced
5. 1 tablespoon garam masala or 1 tablespoon curry powder
6. 1 teaspoon salt
7. 1 teaspoon turmeric
8. 1 teaspoon coriander
9. 1 (14 ounce) can diced tomatoes with juice
10. 2 cups frozen baby peas
11. 1 tablespoon sugar
Directions:
1. Combine ginger, cury masala, salt, turmeric, coriander, and sugar in 1/3 cup water.
2. Sautee the onion and garlic in a little bit of peanut oil until fragrant. Add tomatoes, tofu, peas and mix well.
3. Stir in seasoning blend.
4. Simmer ten minutes or until tofu and peas are cooked through.
5. Serve with basmati or jasmine rice.
