Ingredients for 4 servings:
1. 455 g basmati rice
2. 5 tablespoons vegetable oil
3. 2 tablespoons mustard seeds
4. 6 curry leaves
5. 2 lemons, juice and zest of
6. 1 bunch fresh cilantro
7. salt and pepper
Directions:
1. Cook rice in boiling water for 10 minutes and drain.
2. Heat oil in a small frying pan.
3. Add mustard seeds.
4. When seeds being to pop add curry leaves and lemon zest, cook for 1 minute.
5. Add drained rice, lemon juice and cilantro.
6. Serve piping hot with curry.
