Ingredients for 48 servings:
1. 1 1/2 cups flour
2. 1 cup wheat flour
3. 1 teaspoon baking soda
4. 3 1/2 cups quick-cooking oats
5. 1 egg
6. 1 egg white
7. 1/2 cup butter
8. 1/2 cup unsweetened applesauce
9. 1/2 cup brown sugar
10. 1/4 cup Splenda sugar substitute, plus
11. 2 tablespoons Splenda sugar substitute
12. 1 (12 ounce) package butterscotch chips
Directions:
1. Heat oven to 375°F.
2. Grease cookie sheets, or a 9×13 cake pan.
3. Combine the first five ingredients in a medium sized mixing bowl and set aside.
4. Combine egg whites, butter, apple sauce, and sugars in large mixing bowl.
5. Mixing with hand held mixer or with wooden spoon til incorporated. Mix should resemble sand.
6. Gradually add the flour mixture to creamed mix until mixed together.
7. Stir in butterscotch chips.
8. Drop by teaspoon on sheets. Placed 2 inches apart. Bake 8-10 minutes or til edges golden brown. If baking bar version, bake 20-25 minutes, or til center is set.
9. Cool completely on wire rack.
