Ingredients for 4 servings:
1. 4 ounces ghee (clarified butter)
2. 3 onions, chopped
3. 2 garlic cloves, crushed and chopped
4. 2 teaspoons ground ginger
5. 1/4 teaspoon chili powder
6. 2 tablespoons mild curry powder
7. 2 tomatoes, chopped
8. 2 teaspoons salt
9. 2 tablespoons flour
10. 3 cups coconut milk
11. 1 cucumber, peeled and cubed
12. 1 lb lobsters or 1 lb prawns, cooked and peeled
13. 1 tablespoon lemon juice
14. 1 tablespoon plum jam
Directions:
1. melt the ghee, fry the onions and garlic till golden brown.
2. Add the ginger, chilli, curry powder and tomatoes, cover the pan and cook for 10 minutes.
3. stir to prevent burning or sticking.
4. Stir in the flour and coconut milk, stir till boilling, cook for 2 minutes.
5. Add the cucumber cook for 15 minutes.
6. Add prawns, lemon juice and jam, stir.
7. when prawns are hot SERVE.
