Ingredients for 3 servings:
1. 200 g split peas, dried, boiled until tender
2. 60 ml olive oil
3. 1 teaspoon cumin powder
4. 1 tablespoon lemon juice
5. 2 garlic cloves
6. 10 g coriander or 10 g cilantro leaves
7. 2 pieces bell peppers, jalapeno
8. 1/2 teaspoon salt
9. 250 ml coconut milk
10. 250 ml water
11. 60 ml coconut oil
12. 30 g coconut flour
13. 120 g flour, cassava
14. 1/2 teaspoon salt
15. 30 ml ghee
Directions:
1. Combine all ingredients for the hummus in a food processor and pulse until smooth.
2. Combine coconut milk, water, cassava flour, coconut flour, coconut oil, and salt in a bowl. Mix into a smooth batter.
3. Melt ghee in a non-stick pan over high heat.
4. Pour in 1/6 of the batter and cook over medium heat until bubbles appear on the surface. About 2 minutes per side.
5. Flip and continue cooking for about another minute.
