Ingredients for 6 servings:
1. 3 cucumbers
2. 1 teaspoon salt
3. 3 tablespoons soy sauce
4. 2 cups rice wine vinegar
5. 1 tablespoon sugar
6. 1 teaspoon sesame oil
7. 2 tablespoons scallions, finely chopped
8. 1 tablespoon fresh gingerroot, finely chopped
Directions:
1. Peel cucumbers.
2. Slice thinly.
3. Mix remaining ingredients and pour over cucumbers.
4. Stir carefully.
5. Chill.
