Ingredients for 4 servings:
1. 4 tablespoons butter
2. 3/4-1 lb mixed mushrooms, thickly sliced (personal preference)
3. 2 -3 celery ribs, diced small
4. 1 tablespoon parsley
5. 1/2 teaspoon basil
6. 1 bay leaf
7. 5 tablespoons flour
8. 5 -8 cups chicken stock (personal preference)
9. 3 tablespoons lemon juice
10. 1 pinch thyme
Directions:
1. Melt butter in large pot over medium heat.
2. When hot, add onions and celery.
3. Cover and cook 3 minutes over low heat.
4. Add sliced mushrooms and seasonings to the pot, mix well, then add lemon juice.
5. Cover and cook for 6 minutes over medium heat.
6. Mix in flour until well incorporated.
7. Cook 2 minutes over low heat, uncovered.
8. Pour in chicken stock and mix well.
9. Cook soup, partly covered, over low heat for 30 minutes.
