Ingredients for 4 servings:
1. 3/4 cup butter, softened
2. 1/2 cup sugar
3. 2 egg yolks
4. 1 egg, large
5. 1 teaspoon vanilla
6. 1/2 lemon, juice and zest of
7. 2 1/2 cups cornstarch
8. 1 cup all-purpose flour
9. 1/2 teaspoon baking powder
10. 1 (8 ounce) can caramels
Directions:
1. Beat together butter and sugar until fluffy. Add in egg and yolks, vanilla, lemon juice and zest.
2. Sift together cornstarch, all purpose flour, and baking powder. Combine with egg mixture. Ball up and press slightly. Chill for at least 1 hour.
3. Make into small balls and press slightly onto the cookie sheet. Bake at 375 degrees for 9-11 minutes. Cool when done.
4. Sandwich caramel between two pieces. Serve.
