Ingredients for 1 servings:
1. 9 medium shrimp
2. 1 cup fresh lemon juice
3. 1 Belgian endive, thinly sliced
4. 2 cups mesclun
5. 1/4 red bell pepper, thinly sliced
6. 1/4 yellow pepper, thinly sliced
7. 20 chives, chopped
8. 1/2 mango, peeled and thinly sliced
9. 1/2 Hass avocado, chopped
10. 1/2 cup cilantro almond pesto sauce
Directions:
1. Marinate shrimp in lemon juice.
2. Steam shrimp.
3. Chill shrimp.
4. Toss greens with 1/2 of the cilantro almond pesto.
5. Plate greens and tope them with mango, avocado and peppers.
6. Toss shrimp with remaining pesto. Place shrimp on top of salad.
7. Garnish with chives.
