Ingredients for 6 servings:
1. 1 1/2-2 lbs beef stew meat
2. 1/4 cup all-purpose flour
3. 2 (16 ounce) bags frozen stew vegetables (onion, potatoes, carrots)
4. 1 (14 ounce) can diced tomatoes (undrained)
5. 1 bay leaf
6. 1 (1 1/4 ounce) package Lipton Beef and Onion Soup mix
7. 1/2 cup dry red wine or 1/2 cup water
Directions:
1. Preheat oven to 425°F In 2 1/2 quart casserole toss beef with flour, then bake uncovered 20 minutes – stirring once halfway through.
2. Reduce heat to 350°F Add frozen stew vegetables, tomatoes, bay leaf, soup mix and wine.
3. Bake covered 1 1/2 hour or until beef is tender. Stir after one hour.
4. Season to taste (season salt, garlic powder, ground black pepper).
5. Serve as is or over rice or noodles.
