Ingredients for 6 servings:
1. 1 tablespoon oil
2. 1 tablespoon lemon juice
3. 1 clove garlic, minced
4. salt, pepper
5. 24 large shrimp, peeled and deveined
6. 1/4 cup packed brown sugar
7. 1/4 cup dark rum
8. 1/4 cup corn syrup
9. 3 tablespoons Dijon mustard
10. 1 tablespoon butter
11. 1 pinch cinnamon, salt,pepper
12. cooking spray
13. 6 skewers
Directions:
1. mix oil, lemon juice, garlic, salt& pepper and add shrimp.
2. marinate and chill for 15 minutes.
3. meanwhile add sugar and next 8 ingredients to a small saucepan, bring to a boil and simmer 5 minutes thread 4 shrimp on each skewer.
4. heat grill and coat with cooking spray, or use a grill pan coated with spray cook 3 minutes per side, basting generously with sauce.
