Ingredients for 48 servings:
1. 14 ounces brown sugar
2. 1 1/2 cups sugar
3. 12 ounces shortening
4. 3 eggs
5. 1 tablespoon vanilla
6. 1 tablespoon milk
7. 3 cups flour
8. 1 1/2 teaspoons baking soda
9. 1 1/2 teaspoons baking powder
10. salt, pinch
11. 3 cups quick-cooking oats
12. 1 cup raisins
Directions:
1. Preheat oven to 375 degrees
2. Cream shortening and sugars.
3. Add milk, vanilla, and eggs fold in flour, soda, powder and salt.
4. Fold in oats and raisins.
5. Roll cookie dough into walnut sized balls and place on a cookie sheet lined with parchment, leaving space between the cookies, as they will spread slightly while baking.
6. Bake the cookies for around 12 minutes or until they are just golden brown. Allow to cook before removing from the pan and store in a cookie jar.
7. Sometimes I add in chopped walnuts for a little extra crunch.
