Ingredients for 2 servings:
1. 8 -10 large shrimp, deveined, tail on
2. 1/2 cup red onion, sliced
3. 1/2 cup yellow onion, sliced
4. 1 garlic clove, chopped
5. 1/4 teaspoon crushed red pepper flakes
6. 1 jalapeno pepper, sliced with seeds
7. 2 large roma tomatoes, seeded and diced
8. 2 tablespoons lemon juice
9. 1/2 cup white wine
10. 3 tablespoons butter
11. salt and pepper
12. grated parmesan cheese
13. 1/4 lb linguine, cooked
Directions:
1. In a large saute pan, melt butter over medium heat.
2. Saute onion and jalapeno about 3 minutes.
3. Add garlic, crushed red pepper and shrimp and cook until shrimp is opaque, about 2 minutes.
4. Add tomatoes, lemon juice and white wine and reduce until sauce thickens, about 2 minutes.
5. Divide cooked linguine into two bowls and spoon sauce over.
6. Serve immediately and pass grated Parmesan cheese.
