Ingredients for 1 servings:
1. 1 lb shrimp, cooked, peeled, and deveined
2. 1 cup all-purpose flour
3. 1 teaspoon baking powder
4. 1 teaspoon salt
5. 1 teaspoon pepper
6. 2 large eggs
7. 1/4 cup beer
8. 1 medium onion, chopped
9. 1 jalapeno pepper, seeded and minced
10. 4 garlic, cloved minced
11. 1/2 teaspoon dried thyme
Directions:
1. Coarsely chop shrimp, set aside.
2. Beat flour and next 5 ingredients at medium speed with an electric mixer until smooth.
3. Stir in shrimp, onion, and next 3 ingredients; cover and chill 2 hours.
4. Pour oil to a depth of 5 inches into a Dutch oven.
5. When oil is hot, drop batter by rounded tablespoonfuls, and fry, in batches, 5 minutes or until golden.
6. Drain fritters on paper towels.
